There are most certainly a lot of web documents that explain it, but let me give it a try.

Let's assume that I send a message to you from gunnar@xxxxxxxxxxxxx If you look at the full header of the message, you'll probably see (among other things) these headers:

Return-Path: <gunnar@xxxxxxxxxxxx>
From: Gunnar Hjalmarsson <gunnar@xxxxxxxxxxxx>

The latter is the address I set as the sender address in my email client, and the address you probably see when reading the message in your email client (unless you check the message source). It serves the purpose of telling you that it was I who sent the message. Unless there also is a "Reply-To:" header, it's the address that your email client will automatically make the "To:" header if you click the "Reply" button.

The "Return-Path:" header displays the so called MAIL FROM address, which is considered to be the 'real' sender. It's normally set by the sending mail server, and when I send via my ISP using my email client (in my case Mozilla Thunderbird), my ISP's server makes the "Return-Path:" equal the "From:" address. The significance of the "Return-Path:" (SPF left aside...) is that if your mail server hadn't accepted my message, the resulting un-delivery message would have gone to that address.

If there also is a "Reply-To:" address, that address rather than the "From:" address is the address that your mail client will automatically put in the "To:" field if you click "Reply".
