new script, or 2) leave it up to me to use whatever script...
... Which could take care of the problem, while also maintaining the ability
to do sendmail on my website...
... Right?

No, you don't. The size of the possible security problem depends on
whether your provider has taken any actions to improve the script in
that respect, and it's their possible problem, not yours.
Well, if a spammer uses it for sending bulk garbage, you should expect
your provider to cancel the formmail feature. That's how it might affect
you directly.
